   Through the years, I believe I have become something of an expert on peanut butter sandwiches. They are a major part of my day-to-day diet. Easy to make – a peanut butter sandwich is the perfect thing to eat when the cook is on strike.
   The basic peanut butter sandwich is just plain peanut butter between two slices of bread. Most any kind of bread will do, and it does not even have to be two slices of bread  -- one slice will do, folded over onto itself or consumed straight-up as an “open face” sandwich. You do not even have to have bread since crackers will do nicely.
   I am aware that some people make peanut butter sandwiches by spreading the peanut butter on one slice of bread and then just plopping down another slice on top of the one with the peanut butter on it.
   When done in that fashion, the side of the sandwich without the peanut butter is the “top” of the sandwich;  however, telling what is “up” and what is “down” becomes more complicated when one makes peanut butter sandwiches the way I do. I put an ample dose of peanut on both slices of bread!
   The way one makes a plain “just peanut butter” peanut butter sandwich influences greatly the manner of preparation of the great variety of peanut butter sandwiches with other ingredients added.
   Some folks make peanut butter and jelly sandwiches by spreading peanut butter on one slice of bread and jelly on the other. In that case, the jelly side is viewed as the “top” of the sandwich.
Personally, I favor putting peanut butter on both slices and spreading the jelly on one slice or the other on top of the peanut butter. The jelly is between the peanut butter.
   The same goes for peanut and banana sandwiches. Some very decent folks put peanut butter on one slice of bread and slice up a banana to go on top of that and then plop down another slice of bread on “top.”  But, dear people, that is so wrong!
   The peanut butter and banana sandwich is so much better and, not to mention, more stable from a construction standpoint, when the banana slices are secured between layers of peanut butter generously applied to both slices of the sandwich bread.
   When I have the time, I mix the jelly and the peanut butter before spreading it onto the bread. I do the same with bananas – mashing them up good in a bowl and then mixing in the peanut butter before spreading on the bread. Others do the same, and the mixture is spread on the bread in the manners previously discussed.
   I frequently have prepared “peanut butter-jelly-banana” sandwiches, mixing up both jelly and bananas with the peanut butter before spreading.
   Recently, not having any jelly, jam or bananas, I “invented” (at least, the “first time” for me) a peanut butter and raisins sandwich. Of course, I used the method with peanut butter generously spread on two pieces of bread and raisins in-between.
   When I told about my “invention” on Facebook, I found out that others had already been doing such. Missy O’Brien, whom I have known since she was a little girl, advised in a reply that her own little boy had “invented” the peanut butter and mayonnaise sandwich. I told her to just go on letting her son “think” he had invented the peanut butter and mayo sandwich, but my father ate those when I, myself, was a little boy. Daddy also ate peanut butter and ketchup sandwiches. My father even ate peanut butter and cold turnip greens sandwiches!
   I have only eaten cold turnip green sandwiches one time when Daddy made lunch one day after some of my friends and I had spent the morning deer hunting together with my father out at Gore Springs. I do not believe Daddy put any peanut butter with the turnip greens that day, but peanut butter would probably have greatly improved the taste and, maybe, kept the bread from getting so soggy from turnip greens juice. Mercy!
   Since the peanut butter and raisins sandwich, which was quite good, I have done peanut butter and gummy bears sandwiches, peanut butter and cut-up pieces of candy orange slices sandwiches, and peanut butter and mini-marshmallow sandwiches.
   Peanut butter is, indeed, versatile. Sometimes, Beverly and I both just eat it plain by the spoonful. Beverly likes to get a big spoonful of peanut butter and then “dip” cookies or crackers. I just eat the whole over-loaded spoonful of peanut butter straight from the spoon. I always get a clean spoon for seconds so as not to taint what remains in the jar. We buy big jars of peanut butter!
   Oh, by the way, I have had peanut butter between two slices of cheese. That’s very good!
One guy on Facebook just flat out told me I was crazy. I told him that I might be crazy, but I know I will never starve to death as long as I have peanut butter in the house!
